Basic Waffle Recipe

2 cups sifted flour 2 eggs, separated
3 tsp baking powder 1 ½ cups milk
1 tsp salt 6 Tbs melted shortening or salad oil
2 Tbs sugar

1. Sift together the flour, baking powder, salt and sugar.

2. Beat egg yolks; add milk and melted shortening. Pour into flour mixture and – stir just enough to moisten dry ingredients. Fold in egg whites which have been beaten until stiff but not dry.

3. Grease a hot waffle iron if necessary and pour batter to one inch from edge.

Bake four to five minutes. Serve hot.
