|2 cups sifted ﬂour||2 eggs, separated|
|3 tsp baking powder||1 ½ cups milk|
|1 tsp salt||6 Tbs melted shortening or salad oil|
|2 Tbs sugar|
1. Sift together the flour, baking powder, salt and sugar.
2. Beat egg yolks; add milk and melted shortening. Pour into ﬂour mixture and – stir just enough to moisten dry ingredients. Fold in egg whites which have been beaten until stiff but not dry.
3. Grease a hot waffle iron if necessary and pour batter to one inch from edge.
Bake four to five minutes. Serve hot.
